Native to the shallow seas of Northern Europe the Lemon Sole is something of a misnomer, it doesn’t actually taste of lemon, nor is it a sole, but instead a flounder from the same family as Turbot and Halibut. It gets its name from its pale yellow colour.

The Lemon Sole is a delicate fish with a sweet fresh taste. Its best kept simple so try it grilled, fried, with light fresh flavours.

You will do well to find better quality Lemon Soles than those that come from the West Coast of England!
