Sardines
Sardines are actually baby pilchards – long, thin, silver, oil-rich fish. Sardines are a sustainable choice of fish and now considered a superfood due to its rich omega-3 fatty acids.
Sardines are best sourced from the South/West Coast, the French Coast and the Mediterranean, they tend to prefer warmer waters.
They range in size from 80g to 120g, and are ideal for grilling whole and served as a starter or for barbecuing.
